Hi Ladies.

I am wondering how you all feel about continuing lunch bunch. A lot of you are working lots of hours, balancing family, jobs, school, kids activities etc. I have so enjoyed doing lunch every month, but I'm not sure if we should continue unless you are all interested still. It seems like the best day for most is Friday at this point. I had the idea of maybe going to dinner instead of lunch at people's houses once a month, that would possibly help with daily activity conflicts. If you have suggestions or ideas, please let me know! I, for one, am still happy to do it, I enjoy getting together and I really love your friendship. However, life is very very busy for all of us, and trying to prioritize things is hard sometimes! Please respond so we can decide whether we should continue or not and again, I'm so thankful for all of your friendships!!!!

We will meet every third TUESDAY this year! Hopefully that will work with everyone's busy schedules, I tried to work around as many as were possible! Hello girls!!
Thanks to all of you for making our Lunch Bunch so much fun. All the delicious food, cute babies, fun memories and most of all good friends have made for wonderful memories!!! Hopefully, you are all still planning on enjoying lunch together in this new year.
Just a few reminders:
Lunch bunch will always be in the third week of the month, it seems like Wednesday or Thursday works best, you decide. If there is a holiday on that week of your month, you can reschedule as needed, otherwise always the third week, so it's easy to remember!
When it's your month, you are in charge of planning, invitations, (blog post and formal invite if you want works!) food and activities as you wish. If you need help with anything, we are all more than willing to help each other out!!! (be creative! We all love different ideas!)
When it's not your month, you are in charge of being there (if you can!) and RSVP-ing if you can or can't! Please remember that each month someone puts a lot of effort and time into planning, so please try to come if possible and if you really can't, it really is just a quick text or phone call to let the hostess know you can't come. I know we all appreciate knowing how to plan!!!
Kids are welcome, of course, but if possible, try to make other arrangements.
Here are the coming year's assignments, if your month is impossible, talk to me (Cathi) and we'll work it out!!! Those of us who were at January's lunch (thanks so much Shelley!) planned out as much as we could and I just randomly filled in the rest, I hope that's ok with everyone!

Ok, it's been a long time since I've had a sleepover....what about you? Well, this month for lunch bunch, let's be teenagers again (well, ok, just act like them!) and have a big slumber party! Jon'll be gone for the weekend, backpacking, so we'll have the house to ourselves (plus my little ones!!) and we can party all night long! We'll eat chocolate, dinner, watch movies, eat chocolate, talk, eat chocolate, stay up late, do nails, eat chocolate, eat chocolate chip pancakes, whatever!!! Babies are of course welcome, and don't feel obligated to stay all night if you don't want to, but it sure would be fun!!!

Once upon a time there were two beautiful mommy's: Tara Wall and Lori Hardy.

What sweet mommy's they were, and since they were so good at their job, they decided to increase their families with two new baby boys!!!

One day, (Thursday June 4, 1:00 pm) their friends decided to get together at Cathi's house to shower them with love and to help those babies learn the importance of good books!! And also to eat a yummy "storybook" lunch.

So, everyone who came to the "shower" brought a special book that they love, to give to baby Boston and baby "Hardy", with a note inside telling them why they loved the book so much. This made the sweet presents special for the babies because they would always know why these books were so neat! And also, who loves them!

Hey girls!

I just wanted to thank you all for being such great people and hope you all are planning to continue on with Lunch Bunch for 2009! We've had some really fun times the past 2 years! I'm looking forward to lots more!!!

Speaking of 2009, I stumbled upon this really great blog, I can't even remember the name of it, but I was looking for a home evening lesson about goals. Well, I found this one that talked about the author's disdain for regular "resolutions" and focuses instead on 1 word for the year. The word encompasses everything she wants for the coming year, and includes goals. I thought, "How cool!" So we did it for FHE last night. We each made a poster of words that came to our mind. We used crayons and markers and just wrote all over our papers. We all had 30-40 words. Then we picked one word that stuck out to us on our paper, or one word that described most of the other words. Anyway, it was a really, really fun night and I was pleasantly surprised at my children's words and responses.

Soooo, I challenge you all to pick 1 word that represents what 2009 is going to be for you and why! I would LOVE it if you'd share with all of us!! This could be really fun!!!

Hey girls!

I am trying to plan this months "bunch" but it's going to be a little different!

I have October and I'm excited to do a Halloween party, but we need to put our heads together for Sept.

We are planning on doing a photography, computer, blogging, adobe, etc. etc tutorial for the afternoon which will be tonnes of fun and very informative!

We don't, however, have a hostess!

Would any of you be willing to host the lunch bunch at your house this month?

Don't worry about food, I will make up a menu and ask everyone to bring something so we will all pitch in and it'll be great, we just need a house!!!!!

Chicken & Wild Rice Salad

1 1/2 Cups Wild Rice

1 Green Bell Pepper, chopped

1/4 Cup toasted Pecans

1 Cup Snow Peas, chopped

3 grilled Chicken Breasts, cubed

Juice of a Lemon

1 Tomato, diced

Dressing ingredients:

2 cloves of Garlic, minced

1 Tbl Dijon Mustard

1/2 tsp. Salt

1/4 tsp. Pepper

1/4 Cup Seasoned Rice Vinegar

1/4 Cup Olive Oil

Toss all salad ingredients together in a large bowl. Combine dressing ingredients and pour over salad right as you serve it. This salad was served warm but can be served chilled also.

Cathi's Coconut Cupcakes

1 box classic white cake mix
1/2 c water
1/2 c coconut milk (I use coconut cream)
1/3 c vegetable oil (or pina colada yogurt)
3 large eggs
1 c chocolate chips

Preheat oven to 350. Line muffin tin with paper liners.
In a large bowl, combine cake mix, water, milk, oil and eggs. Beat at low speed for 30 seconds, then medium for 2 minutes. Stir in chocolate chips. Spoon into cupcake liners and bake for 18 minutes. Cool thoroughly, then frost with coconut frosting and sprinkle with shredded coconut!

Coconut Frosting
1/2 c butter, softened
1/2 coconut milk
5 cups confectioners sugar

In large bowl, beat butter and milk on medium speed with mixer until combined. Gradually beat in sugar until smooth. Yummy! (and I really hate shredded coconut, so I leave it off mine, but I love the taste of the coconut milk and of course, the chocolate!!!)

Peanut Butter Truffle Brownies

PEANUT BUTTER TRUFFLE BROWNIES:

BASE: 1 Box of Brownie Mix (9x13) Cooked & completely Cooled

FILLING: 1/2 Cup Butter (Softened)

1/2 Cup Creamy Peanut Butter

2 Cups Powdered Sugar

2 tsp. Milk

Beat the "Filling" ingredients together in a bowl until smooth. Then spread over the COOLED brownie base.

TOPPING: 1 & 1/4 Cup of Milk Chocolate Chips

1/4 Cup Butter

Use a small microwavable bowl and put chips and butter together uncovered on HIGH for 60 sec. Stir and repeat until smooth. Cool for a few minutes and spread over the "Filling". Refrigerate for 30 minutes until set. Cut and serve. Store left-overs in Fridge...if there are any.

1 EMPTY Gallon Ice Cream Bucket

2 Cans of Frozen Limeade Concentrate

4 Cups of Sugar

16 Cups of Water (Fill the Gallon Ice Cream Bucket)

Stir and Put in the Freezer. Stir slushy mixture every hour for 8 hours. Scoop and serve with Sprite. Garnish with Lemon & Lime slices. ENJOY!

THE MOM TEST

I was out walking with my 4-year-old daughter. She picked up something off the ground and started to put it in her mouth. I took the item away from her and I asked her not to do that. "Why?" my daugher asked. "Because it's been on the ground, you don't know where it's been, it's dirty, and probably has lots of germs." I replied. At this point, my daughter looked at me with total admiration and asked: "Momma, how do you know all this stuff? You are so smart!" I was thinking quickly..."All Moms know this stuff. It's on the MOM TEST. You have to know it, or they don't let you be a Mom!" We walked along in silence for 2 or 3 minutes, but she was evidently pondering this new information. "OH! I get it!" she beamed. "So if you don't pass the MOM TEST, then you have to be the Dad!" "Exactly", I replied back with a big smile.

I've never posted before and wanted to try and I have a good message to share, so ... .
Our neighborhood did a service project at Christmas for a family whose father died. They are living in pretty rough conditions and are really great people. If you want to donate money to help them get their house liveable, there is an account (Clayton Peterson fund) set up at UCCU. There have been several contractors who have donated free labor to help this family out. Any little bit would help. Contact me for more details.

Shannon had her baby FINALLY...on Monday afternoon!

Ryton was 8 lbs. 1 oz. and other than a little fluid in his lungs he was healthy!

They should be getting home from the Hospital today (Wed.).
